An 11th-plus edition, returning in 2023 after a three-year hiatus — fregnacce, a hand-rolled egg pasta unique to the Campli area, dressed a dozen different ways, from a rich mixed-meat ragù with pecorino and shaved truffle to an all-vegetable version with courgette, asparagus, and borage, or simply cacio e pepe. A genuinely old recipe, made exactly as it always was, alongside formaggio fritto, hand-rolled frittelle, and grilled sausage.
