A borgo built almost entirely of stone spends a week doing what it's done for 25 years — turning the summer black truffle of the Monti Gemelli into tagliatelle, ravioli, cinghiale, and a burratina so good it's earned its own name. The whole thing runs fully under cover, rain or shine, and closes with a truffle-dog competition that pulls competitors from outside the region.
